There are several interesting covers out there of Tori's song done by various college choral groups. I don't think any of them are officially released. One in particular that is interesting is an acapella version of Raspberry Swirl! Read more about these covers in this thread of the Dent's Main Tori Forum. (Thanks Erinn Streeter.) Also be sure to check out the web site for Off The Beat, UPenn's co-ed a cappella group that has recorded that acapella version of Raspberry Swirl, as well as some other Tori songs like God and Jackie's Strength.
